Polynesian Roots and Breeze Block Magic at Oliver’s Modern American in Scottsdale

Karin Jeske

Nestled in Scottsdale, Arizona, Oliver's Modern American Restaurant is not just a dining experience, but a celebration of rich history and modern design. Opened in May 2024, this restaurant invites patrons into a revitalized mid-century modern building that pays homage to its past while offering a contemporary dining atmosphere.

Crater and Terrace Breeze Blocks

One of the key design features that sets the tone for this sophisticated yet approachable space is a breeze block wall constructed from a combination of Tesselle’s Crater and Terrace Breeze Blocks in a random layout, both in color White. This stunning wall separates the hostess stand from the dining area, offering a seamless transition between spaces while showcasing the versatility of breeze block design.

A Fusion of Modern Design and Nostalgic Architecture

Oliver's Scottsdate

With a nod to its past, Oliver's now stands as a completely revitalized 4,400-square-foot dining destination. The original 1,000-square-foot building, which served as the first Polynesian Dairy Queen, has been preserved as a cocktail lounge, while a new, larger space has been added to house the main dining area. The redevelopment was led by Brian Krob of ALINE Architecture and Social Design Studio, who worked together to expand and update the space while maintaining its historical significance.

The addition blends harmoniously with the original A-frame structure, creating a unified design that echoes the restaurant’s heritage while embracing a fresh, modern aesthetic.

Steve Ellefson, part-owner of Oliver's has described how people come to tears when they step inside the space and recognize it from their childhood.

Oliver’s is housed in what was originally a Polynesian-themed Dairy Queen designed in the 1960s by Ralph Haver's architecture firm. Haver, a prominent figure in Arizona’s architectural history, shaped the mid-century modern landscape in the region. The building's A-frame design, typical of the Polynesian style, became a local icon. When real estate developer Tom Frenkel of Clayton Companies discovered plans to demolish the building in 2019, he stepped in, saving the structure from destruction and moving it to its current location on Hayden Road.

Tesselle Breeze Blocks: A Statement in Design

Terrace and Crater Breeze Blocks at Oliver's Scottsdale

At the heart of the design is a striking wall made from Tesselle’s Crater White and Terrace White Breeze Blocks. This wall, which divides the hostess stand from the seating area, serves as more than just a functional partition—it is a work of art. The combination of the two different block styles creates visual interest while offering texture and depth to the space. The breeze blocks also reflect the mid-century modern style, seamlessly connecting Oliver’s design to the architectural legacy of Ralph Haver’s original building.

Tesselle’s breeze blocks are known for their durability and timeless appeal, making them the perfect choice for Oliver’s. Their intricate patterns and clean lines add a contemporary touch while respecting the historical significance of the restaurant’s location. The breeze block wall sets the tone for the dining experience, offering a sense of refinement and creativity from the moment guests walk in.

The Dining Experience

At the helm of Oliver’s kitchen is Chef Kent Macaulay, known for his expertise in creating globally-inspired dishes with a modern twist. Macaulay’s menu offers a diverse range of flavors, from Moroccan chicken skewers to coffee-crusted New York strip, all made with fresh, locally sourced ingredients.

Diners can enjoy small plates like grilled shrimp with avocado mousse, or heartier mains like coconut lime scallops served with succotash, or a juicy New York strip with cauliflower puree. The restaurant also offers a selection of signature craft cocktails, such as “The Queen,” a nod to its Dairy Queen roots, made with vanilla vodka, amaretto, pineapple juice, and grenadine.

The cocktail lounge, housed in the original Dairy Queen building, offers a cozy yet stylish place to enjoy a drink. With its high vaulted ceilings and earthy color palette, the space is both relaxing and sophisticated. Guests can sip on specialty cocktails like the smokey old fashioned or an ancho margarita while taking in the mid-century modern decor.

A Community Landmark Reimagined

Oliver’s Modern American has quickly become a beloved addition to Scottsdale’s dining scene. Its blend of modern American cuisine, thoughtful design, and rich history makes it a standout destination for both locals and visitors. The restaurant’s connection to its mid-century past, combined with its contemporary atmosphere, ensures that Oliver’s will remain a cherished part of the community for years to come.
